Elderberry Pond Lenten Special

During the 40 days before Easter Sunday many people all over the world follow the tradition of eating Lenten foods begun in the sixth Century in Rome. While over time the exact interpretation of Lenten foods  has changed the basic principle of eating simple unadorned foods that come from the land, lake or seas including fish, vegetables, fruits and special breads remains.  These simple foods seemed appropriate for families devoted to prayer and reflection.  In the colder regions of Europe eating these foods in early spring meant eating food that had been preserved a by salting, drying, smoking, or root cellaring.   At Elderberry Pond our focus all year is on eating from the land and for our spring menu we are reliant on foods that we have preserved from our summer harvest through these same preservation techniques.   During this particular spring, in this country, simple foods from our land, lakes and seas seem appropriate.

First Course

Elderberry Pond Organic Mesclun Salad with House Vinaigrette

(These fresh salad greens are grown in our solar hoop-house)

Cup of Soup of the Week

Second Course

Seafood Stew - Bouillabaisse

Fish stock with fresh fish and shell fish,

organic fire roasted tomatoes, leeks, fennel, celery, onions, shallots, garlic,

and served with toasted garlic bread

or

Broiled Fresh Haddok

Served with lemon butter crumb topping

or 

Vegetable Pasta with Whole Wheat Organic Fettuccine

Prepared with seasonal vegetables, sun-dried tomatoes, onions, garlic, roasted peppers,

 artichoke hearts & button mushrooms topped with feta cheese
